2 slices sourdough bread (1-inch thick)
2 tbsp peanut butter

Slice two slices of sourdough bread, each 1-inch in thickness, and toast the slices. Lather each with peanut butter and coconut yogurt. Sprinkle with walnuts and chocolate chips. Drizzle each slice with 1 tsp agave, or to taste.

Yesterday I baked these CHOCOLATE protein muffins as my sweet treat for the week and I’m soooo hyped with how they turned out🤩🍫 I aimed to make this recipe pretty healthy but GUYS these muffins are still so delicious and flavorful🤗 Feel free to double the recipe or add in chocolate chips!💗⁣

✨Details for 8 chocolate protein muffins!⁣
⁣
🌟Ingredients:⁣
-2 eggs ⁣
-1/4 cup peanut butter (the crunchy kind is unreal in this!)⁣
-1/3 cup maple syrup ⁣
-3/4 cup soy milk (add more or less depending on how thick your protein powder makes the batter)⁣
-2 scoops vanilla protein powder ⁣
-1/4 cup coconut flour ⁣
-1/4 cup cocoa powder ⁣
-1/4 tsp salt⁣
-1 tsp baking soda ⁣
⁣
🌟What to do:⁣
Mix together wet ingredients, add in dry, and stir it all up. Pour batter into a greased muffin tin (dividing it into 8) and bake on 350° for 15 minutes :)

red lentil & tomato curry (serves 3-4)
-1 large onion, diced
-4 cloves garlic + 1 tbsp ginger, minced
-2 large carrots, diced
-1/2 tsp each: ground turmeric, ground cumin, paprika, red chili flakes
-3 tbsp red / yellow curry paste
-1/2 cup tomato paste
-1 cup dry red lentils, rinsed and drained
-1 14-oz can coconut milk (lite or full-fat)
-2 cups water or vegetable stock
In a large pot, sauté the onion, garlic, ginger, and carrots for 5 mins on medium heat. Mix in spices, curry paste, and tomato paste. Once fragrant, stir in the lentils and veggie stock. Cover the pot and let simmer on low heat. Once the carrots and lentils are tender (about 7-8 mins), mix in coconut milk and let cook for 5 more mins before serving... Enjoy!

WHERE DO WE GET VITAMIN D WITHOUT DAIRY? Cows milk has long been fortified with vitamin D, leading the dairy industry to be widely promote it as one of the sole ways to get adequate vitamin D in the diet 🥛.

Vitamin D helps to increase calcium absorption, maintains blood levels of calcium and decreases the amount of calcium we lose in our urine. Because of this, a partnership of both adequate vitamin D and calcium is necessary for optimum bone health 🙌🏼 Vitamin D helps the function of the heart, brain, pancreas, thyroid and muscles. It helps to fight infections in the body, and may be protective against Crohn’s disease, MS, rheumatoid arthritis, diabetes, cardiovascular disease, stroke and certain types of cancers ✨.

There are three ways to get adequate vitamin D: sun exposure, fortified foods, and supplements. When our body is exposed to sunlight, we’re able to make our own vitamin D in the body. It sounds easy, but the amount of vitamin D that we can produce from the sun is completely dependent on factors like our latitude, the time of year, time of day, cloud/smog coverage, sunscreen, clothing and age. We also know the risks of spending too much time in the sun ☀️.

This means many of us need to rely on fortified foods and supplements for adequate vitamin D. Very few foods, animal or plant-based, naturally contain vitamin D. Because of this, relying on Vitamin D fortified foods and supplements is more reliable. Did you know that all fortified plant-based milks have the same amount of vitamin D as cow’s milk (*based on Canadian fortification standards). How do you tell if your plant-based milk is fortified? 50ml oat milk (part A)

Mix and let sit for 10-15 mins.

An absolute family favourite At our house! Pork fillet with mustard cream sauce. Cut whole fillets in half and season with salt and pepper. On a hot pan melt butter and brown fillets lightly. Place pan in the oven and bake for about 20 mins until just lightly pink in middle. Set fillets aside to rest. Place pan with juices over heat and add 2 tablespoons seeded mustard, 1/2 cup white wine and handful of chopped parsley and chives and stir together. Add about 200mls thickened cream and allow to simmer until sauce thickens. Slice fillets into 1 1/2 cm thick slices and pour sauce over.
