okay brrrr I’m freezing but the sun was shining here in PDX and this lunch was on FLEEKY today - a cacao PB smoothie bowl! since getting back into running I’ve tried to eat more nutrient dense meals, and this is one that ALWAYS hits the spot!

Staple meals are meal that just WORK for a few reasons:

👩🏻‍🍳They're easy to prepare
🥰They satisfy you
⏱They save you time

Basically, you don't have to put much thought into them and you look forward to eating them every time.

This chili recipe is one of my staple meals. It's so delicious but I also love that I can make a big batch and freeze it in individual portions. That way, when I have a crazy week, I can pull a serving out of the freezer to defrost and all I have to do is heat it up and top it with all my fave toppings (@traderjoes peach salsa, sour cream, cheese). It's also a nice big portion which I love (#VolumeEater) and you can even throw it over rice, cauliflower rice, sweet potato, etc.

There’s so many different varieties of pasta on the market these days, and my top pick are those that are higher in fibre + protein, with a low glycemic index. That means slow release, long lasting energy and satiation⚡️
For #glutenfree 👉🏼 chickpea, edamame, red lentil + pulse pastas, buckwheat, quinoa or brown rice pasta.
And otherwise 👉🏼 spelt or good old whole wheat!

➰ Assiette verte ➰

Rien de fou ce midi dans l’assiette, mais je joue le jeu, et je vous partage mes repas sans prise de tête tout en équilibre pour vous donner des idées pour vos lunch! Et aujourd’hui, c’est vert ! 😇😅. On a dans l’assiette : 100 gr d’orechiette complètes cuites, 150 gr de brocoli/chou-fleur/chou romanesco, 1 gousse d’ail, 60 gr de petits pois, du persil, de la roquette, 1 oeuf, 1 cc d’huile d’olive.

Dans une casserole, faire chauffer l’eau et cuire les pâtes. Dans une poêle, faire revenir la gousse d’ail hachée avec le mélange de choux et les petits pois, et le persil dans l’huile d’olive. Ajouter les orecchiette dans la poêle, et mélanger. Saler et poivrer.
Cuire l’œuf dans une casserole d’eau bouillante avec du vinaigre blanc façon poché.

Servir avec un peu de roquette, l’œuf et vous pouvez ajouter une touche de parmesan pour les gourmands.

🥔 JACKET POTATOES 🥔 Lunch for the next 2 days is jacket potato-based. Today we are using up leftover pulled pork and coleslaw from Tuesday night’s dinner. Tomorrow it will be cheese and beans. Jacket potatoes are versatile, cheap, can be cooked a few days in advance and stores in the fridge, and so they make great work lunches. My ‘recipe’ for the best jacket potato ever is as follows 1️⃣ rip off a square of kitchen foil for each spud 2️⃣ squeeze a little garlic purée onto each piece of foil and squirt a couple of times with oil 3️⃣ Prick each spud all over with a knife or a fork (I use a knife) 4️⃣ rub garlic and oil all over each spud 5️⃣ wrap in foil 6️⃣ Chuck in (fan) oven on 140 for about 3 hours. Ingredients:⁠⠀
1 tablespoon olive oil⁠⠀
1/2 onion chopped⁠⠀
1/2 poblano pepper seeds removed and chopped⁠⠀
1 red bell pepper seeds removed and chopped⁠⠀
1 small zucchini chopped⁠⠀
2 cloves garlic minced⁠⠀
1 cup fresh or frozen corn⁠⠀
15 oz black beans canned, rinsed and drained⁠⠀
1 tablespoon chili powder⁠⠀
1 teaspoon ground cumin⁠⠀
1/2 teaspoon smoked paprika⁠⠀
1 teaspoon kosher salt⁠⠀
1/4 teaspoon black pepper⁠⠀
1/2 juice of lime⁠⠀
20 oz red enchilada sauce⁠⠀
8 corn tortillas cut into thick strips⁠⠀
2 cups shredded cheddar cheese or Mexican blend cheese divided⁠⠀
1 green onion sliced, for garnish⁠⠀
1/4 cup chopped cilantro for garnish⁠⠀
1 avocado pit removed and chopped, for garnish⁠⠀
Radish slices for garnish⁠⠀
——⁠⠀
Instructions:⁠⠀
Preheat oven to 450 degrees F.⁠⠀
In a 12-inch oven safe skillet, heat the olive oil over medium high heat. Add the onion, poblano pepper, red pepper, and zucchini. Sauté for 4 to 5 minutes, or until vegetables are tender. Stir in the garlic and cook for an additional minute.⁠⠀
Stir in the corn, black beans, chili powder, cumin, paprika, salt, pepper, and lime juice. Pour in half of the enchilada sauce and stir. Add the tortilla strips and stir. Pour in the remaining enchilada sauce and stir until all of the tortilla strips are covered in sauce. Cook for 2 to 3 minutes or until sauce thickens a little. Add in 1 cup of the shredded cheese and stir until the cheese is melted in. Top with the remaining 1 cup of shredded cheese.⁠⠀
Place the skillet in the preheated oven and cook for 5 minutes or until the cheese on top is melted. Remove from the oven and let the enchiladas sit for 5 minutes. Top with green onion, cilantro, avocado, and radish slices. Scoop the enchiladas onto a plate and serve warm.
